This tutored tasting is led by an agronomist and olive oil producer who is also a member of the Umbrian Oil Tasting Panel. Each participant is instructed in tasting techniques and given a specially designed score sheet where the differences and uses in the kitchen are explained. Fabio, the owner of the farm that has been in his family for many generations, will give us a short history of the farm, show us the water-powered grain mill built in 1700 and explain olive oil production in his Museum of Farm Implements. The afternoon ends with toasted bruschetta and a glass of wine from the plains of Spello.
